I should also note that whenever I make cashew cream (or any sauce for that matter) I make a large batch to keep it in the fridge all week long to drizzle on everything from toast to veggies and grains. ![]() Recently, I’ve been keeping a big batch of cashew cream in the fridge so I can spoon feed it to myself drizzle it on our daily toast. I’ve posted the recipe on instagram a few times already this week (this is my 7th day in a row eating it) and I have no intention of stopping until the stash of pomegranates I bought at the store is gone-I went a little overboard so we’ve still got a while! Fingers crossed they love each other!Īnyhow, with all the craziness of the farm slowly waking up from her winter slumber we are loving simple meals like this killer avocado toast. We’re keeping the older chickens away from the babies for a few months but they’ll all get to know each other pretty well once the separation period is over. We love our little ladies and we hope they adjust to life as big sisters without any major hiccups. Yes, our farm family is growing and it’s growing fast! There will also be an increase in egg dishes since our hens are becoming big sisters to 40 baby chicks on Friday. Don’t fret, there will be plenty of elegant meals too, but simple no fuss recipes are my goal for the 2015 season. As the farm season picks up you’ll start noticing simple meals like avocado toast or roasted veggies with pesto more frequently here. I love throwing things together as quickly as possible so we can get back to farm chores ASAP. I’m definitely someone who loves any excuse to stand in front of the stove, sip on a beer and prepare an elegant farm fresh dinner. They are staple meals that I return to time and time again without following any measurements or strict rules. Freezer: For longer storage, keep in the freezer for up to 2 – 3 months.Refrigerator: Leftovers can be stored in the refrigerator for up to 6 days in a covered container.Use right away or let it chill in the refrigerator before using. Once you’ve prepped the cashews, simply add them, along with the dates and water to the cup of your favorite blender and blend until creamy, stopping every so often to scrape down the sides as needed. Feel free to skip this step if you don’t have nut sensitivities. Or cover with cool water and let soak for 1 – 3 hours. Add the cashews to a bowl and cover with hot water, let soak for 10 minutes. It’s powerful, small and cleans up nicely! I love using my NutriBullet (affiliate link) for making cashew creams and sauces. Making cashew sweet cream is so easy to make, and you don’t need an expensive blender either.
